Quick and Easy Recipe: Caprese Stacks

Have you had a Caprese Salad lately? With Memorial Day and the season of picnics, BBQs and patio dining upon us, I always start to think about what kinds of warm-weather meals I can make.

I hate to run the oven or the stove top during the summer, and rely a lot on our grill or no-cook foods for dinner. Last year we had several Caprese Salads, I would slice up the mozzarella and tomatoes, lay them on a platter, sprinkle with basil and drizzle some olive oil over the top. Easy and delicious.

Last weekend, we needed a quick and easy meal. After rummaging in the refrigerator, I came up with a Caprese Salad, but I wanted try something different, so I stacked them. Just that change in presentation, brought this simple meal or side dish up a notch.

My Scraps | Caprese Stackes Served

Ingredients
Tomatoes (plum, heirloom, beefstake)
Mozzarella
Basil
Sea Salt
Olive Oil
Balsamic Vinegar (optional)

Directions
Slice the tomatoes.
Slice the mozzarella.
Alternate the slices of tomatoes and mozzarella to form a stack. Keep it to 4-6 layers depending on the width of your slices.
Cut a chiffonade of basil and sprinkle it on the top of the stacks.
Sprinkle on a little sea salt.
Drizzle some olive oil over the tops and balsamic vinegar if you'd like.

You can wrap it with plastic and put in the refrigerator until you're ready to eat, or you can serve immediately. It's delicious on it's own, or paired with simple grilled chicken or steak.

An easy and quick summer recipe. Perfect for a quick dinner or a pretty appetizer.
