Meal Plan Monday - 2013 Week 25
Today is our official start of summer. The kids each have a half-day today, and then that is IT until September. I don't know about you, but summer brings with it some challenges to my meal planning.
First of all - it's vacation and who feels like planning, let alone cooking? Secondly, it's hot (see number one). So how do you overcome summer meal planning challenges?
Two of my big tips:
1. Let loose on the idea of a "meal" - a meal can be an antipasti plate or a salad, make sure there's plenty of healthy fruits, veggies and yogurt for snacks and sides.
and
2. Grill - even if you don't have a fancy outdoor kitchen, find ways to make cooking outside easier and don't be afraid to experiment.
So putting those two ideas to work for me this week, here is our plan:
Monday - Chicken Caesar Salad with grilled romaine and grilled chicken
Tuesday - Grilled Pork Tenderloin, corn
Wednesday - Flounder Stuffed with Crabmeat and Caprese Salad (chicken Nuggets for the kids)
Thursday - Shrimp Scampi over linguine
Friday - Pizza Night
Saturday & Sunday - TBD
