Weekly Family Meal Plan July 3 2017

Happy Monday meal planners and welcome back! (It's actually Tuesday, sorry for the delay in posting) Can you believe July is here already and summer is in full swing? I hope yours is off to a great start!

We have a lot of things going on around here this summer. The biggest, is that we are packing up our house of nearly 12 years and moving to the other side of our little town. Did you know it's just as hard to move a small distance as it is to move across the country?? So we are in the midst of packing and purging, which can be very soul-cleansing, but at the same time it's exhausting!

For the next two weeks, I'll be packing up dishes and pots and pans while still trying to feel my hungry family something other than take-out. Last night, that meant throwing together some leftover grilled chicken with some cooked pasta. I added fresh chopped Roma tomatoes and marinated mozzarella. A little fresh basil from my herb garden finished it off. Simple and healthy without a lot of fuss or mess.

Trying to keep to that same plan, here's what we have planned for this week:

Monday - Grilled Chicken, Bruschetta Pasta Salad
Tuesday - Burgers and Dogs on the Grill, Baked Beans, Corn and Watermelon - Happy 4th of July!
Wednesday - Grilled Pork Chops with Spinach and Quinoa Salad
Thursday - Grilled Flank Steak, Broccoli and Baked Potatoes
Friday - Pizza Night - homemade margherita pizzas
Saturday - YOYO (You're On Your Own) - while packing and moving boxes.
Sunday -Family Dinner out
