Weekly Family Meal Plan 2017 - Week 2

Welcome back! How is your New Year going? Last week felt like the LONGEST four day week ever . . .anyone else?? Our week ahead is a busy one, packed with music programs at BOTH kids' schools, a work trip for dad and a night out for mom. I find busy weeks the most challenging to plan for, particularly with picky eaters.

But keeping those busy nights in mind, helps me to plan accordingly, so that I don't defrost a big piece of meat on a night we have only an hour between school and an event. I also try to make meals that will create leftovers before busy nights, so that we have foods we can grab quickly. What are some of your favorite busy-night tips?

I also use the weather as a gauge for planning. For instance, it's only getting to a high of 25 here on Monday, so we're trying out a new hearty soup for dinner. By Thursday, it will be closer to 60, perfect for easier meals that don't require heating up the house. Here's what we have planned for this week:

Monday - Potato and Spinach Soup with Sausage, Bread
Tuesday - Pork Tenderloin, Rice Pilaf and Roasted Heirloom Carrots
Wednesday - Meatball Sandwiches and Salad - it's Chorus Concert Night at School
Thursday - Leftover Buffet - it's High School Music Program night
Friday - Homemade Pizza Night
Saturday - Family Dinner Out
Sunday -YOYO (You're On Your Own)
