Meal Plan 2016 - Week 51

Real Food for Real Families

This is it . . .what I think of the last "real" week of the year. Christmas (and Hanukah this year) arrive this weekend. No matter what you celebrate, there's probably a special family gathering and larger than normal meal involved! YUM! But, as faithful meal planners, we know that we still need to plan up to the big event.

This week is super busy, so I'm trying to keep it simple. Yes, I am trying some new things with my Instant Pot, but they don't seem complicated, so wish me luck! Last week, I used it to make frozen chicken wings. Yes - frozen since August sometime, these were not pretty wings. I tossed them into the Instant Pot, rock solid and covered them in some BBQ sauce. I set the controls to High Pressure for 10 minutes, with a natural release and about 30 minutes later, we had tasty, tender wings.

Here's what we have planned for this week:

Monday - Minestrone Soup in the Instant Pot with Bread and Salad
Tuesday - Muffin Tin Meatloaves, Broccoli and Mac and Cheese (Instant Pot?)
Wednesday - Chicken in the Instant Pot with Stuffing and Gravy
Thursday - Leftover Buffet/YOYO (You're On Your Own)
Friday - Pizza Night
Saturday - Christmas Eve Finger Food Dinner
Sunday - Christmas Dinner with Family
