Welcome back to another week of meal planning and dinner organization. It's here . . .Spring Sports. This week kicks off two lacrosse leagues for my teen and little league for my 8 year old. Needless to say, my evenings just got three times busier than they were. Not to mention, work commitments for both my husband and me.
To combat the crazy schedule, I'm keeping things loose and easy this week. I will also pick up some soups, and have some cooked chicken on hand (Quesedillas are an easy go-to) Other carry and go items I like to keep include meats and cheeses with crackers, baby carrots, oranges, apples, hard boiled eggs and hummus.
Here's what we have planned for this week:
Monday - Mini Cheesesteaks (grass-fed beef and organic cheese make them healthier)
Tuesday - Taco Tuesday with Guacamole and Corn
Wednesday - Breakfast for dinner
Thursday - Garlic Shrimp with Linguini
Friday - Boys Night Out - Mom is hosting a Spring Health Make-n-Take
Saturday - YOLO
Sunday - Sit Down Family meal - still in the works.
