So in true spring fashion, life around here has gotten crazy. The longer daylight hours, warmer weather, and kids' sports have thrown a real monkey wrench into all my organization and meal planning efforts.
In fact, come summer, I'm thinking of putting a grill rotation into place for meal planning - so chicken, seafood, burgers/dogs and another meat (beef or pork) each week. . .veggie and salad sides and call it a day. Do you change up for meal planning for summer?
Since summer isn't here quite yet, I put a regular plan into place for this week, with a new recipe and some requests from my family. Here's what's on our plan for this week:
Monday - Homemade Chicken Tenders, Peas, Mashed Potatoes
Tuesday - Quick Dinner (LAX practice and Baseball Game)
Wednesday - Talapia, Veggie, Baked Potatoes, Salad
Thursday - Meatball Sliders, Salad
Friday - Pizza Night
Saturday and Sunday - TBD
