Avocado Watermelon Skewers Recipe

You may know that avocados are a delicious and healthy addition to your menu and party plans. About three slices of avocado (a one ounce serving) has only 50 calories and contributes nearly 20 vitamins and minerals. Did you know that an avocado is a fruit and that they are available year-round? It's true, and avocados contribute good fats to your diet.

When Amazing Avocado asked me to make a recipe using avocados, I knew my twice a month guacamole wasn't "special" enough. . .so I did a search on Pinterest to find something "different" that would be great to bring to a party.  After searching high and low, I decided to try my take on Avocado Watermelon Skewers.

Avocado Watermelon Skewers Ingredients

Ingredients:
1/2 of a small seedless watermelon, cut into bite-sized cubes
1-2 Avocados cut into bite-sized pieces
1 Tbsp fresh lemon juice
1 tsp lemon zest - grated
1/4 cup olive oil
1 1/2 tsp red wine vinegar
1 1/2 tsp sherry cooking wine

Assembly:
  • Arrange the pieces of watermelon on a serving tray or plate
  • Top each piece of watermelon with a piece of Avocado
  • Gently skewer each "tower" with a bamboo skewer
  • For dressing, in a small bowl whisk together the olive oil, lemon juice, lemon zest, red wine vinegar and sherry wine.
  • Pour desired amount over skewers
  • Garnish with edible flowers or herbs

It turned out to be the perfect party food. As part of this campaign, Sarah from Mama Loves Media hosted some of my favorite Bloggers to get together and share our avocado recipes. Sarah made us all Avocado Smoothies, which have become my morning smoothie of choice! Stephanie from Confessions of a Stay at Home Mom, made a delicious Avocado Dressing that is perfect as a dip or to drizzle on tacos. There were even Avocado desserts - Kelly from The CentsibleLife made a Raw Vegan Chocolate Banana Avocado Pie and Julie from The Juliverse contributed an Avocado-Banana Cream Pie. It is truly amazing just how versatile the avocado can be.

An easy recipe for a delicious and pretty appetizer. Use Watermelon and Avocado for these easy skewers.

    2 small avocados, finely diced
    1 cup fresh corn kernels
    2 medium tomatoes, finely diced
    2 tablespoons lime juice
    1 tablespoon finely chopped cilantro
    1/2 teaspoon salt

  4. I am obsessed with avocados and make a guac of some sort 3 days a week for my lunch! I have never had avocado with watermelon before - 2 favorite things...I will have to try it out!   5. We love avocados in this house, but I honestly never even thought about pairing them with watermelons. YUM! We always make up a quick guacamole with fresh tomatoes, and red onion. Everyone jumps for this!

  6. Wait, no guacamole recipes! 2 Large haas avocado, 1/2 vine ripened tomato, juice of one half lime, about a teaspoon finely chopped fresh cilantro, mix all together until well. You can also put in red onions if you desire. Perfect guacamole!

  9. I love avocado. The simplest thing I do is to mix an avocado with a small jar of organic chipotle salsa. It takes a couple of minutes to make at most and is the BEST dip for chips.

    We always have them on hand even though I am the only person who likes them!

    Avocado dip
    Blend avocados, cilantro, onion, garlic, jalapeno, lemon, fresh cream and salt and pepper to taste and you are good to go.

  15. Cilantro lime dip is a favorite here:
    4 avocados
    6 limes
    bunch of cilantro chopped
    Mix until smooth.

  22. I think one of the best ways to serve avacados is to cut them up into chunks, then add a little virgin olive oil and balsamic vinegar! Really tasty.
