Meal Plan Monday - 2013 Week 24
I am fresh off four days away for a work trip. What that means for Meal Planning, is that I probably didn't follow much of last week's plan, I have no idea what in my refrigerator is still good, and I need inspiration and groceries for THIS week (meaning NOW).
So here's how I approached it: I took stock and threw out the bad. Looked at what Main Dish items I had on-hand, made a list of side items and things that have gone bad or we ran out of. Not a bad plan, and in the end it shook it out like this:
Monday - Baked Salmon, Asparagus and Salad
Tuesday - Tortellini
Wednesday - Chicken Cutlets, Potato Medley Salad (recipe to come)
Thursday - Pork Tenderloin (on grill if weather cooperates) with Quinoa & veggies
Friday - Pizza Night
Saturday & Sunday - TBD
I am also starting to think about lunches . . . the kids have four half-days for the remainder of school and will need to bring lunch to camp this summer. I am terribly uncreative at kids' lunches, and my kids don't care for sandwiches. . .what are your favorite kid lunch ideas?
