Menu Plan Monday


Well Fall has officially arrived.  It's time to find some hearty meals, with fall-inspired ingredients.  I'm going to try more squash and pumpkin this fall in my recipes.  I'm also going to try for a soup or stew twice a month.  I love this Butternut Squash Soup from Martha Stewart for October.  And my second batch for the month will most likely be my traditional Halloween Chili.

I made up a double pan of lasagna last night (Sunday).  Instead of making a 9 x13 pan and throwing away a third of it, my friend Terry told me to make 2 smaller pans (8x8 or 9x9) and freeze one (she's BRILLIANT).  So that's what I did.  I used the recipe off the back of the Barilla box because I was saving time, and it worked out great.

Here's what else we have on tap for this week:

Monday - Grilled Cheese w bacon & tomato and soup (Mom is taking Bridge again)
Tuesday - Italian Sausage with spinach & ricotta "turnovers" - adapted from this recipe.
Wednesday - Pan-seared Pork Medallions, Green Veggie & Roasted Potatoes
Thursday - Leftovers (Back to School Night)
Friday - TBD
Saturday - TBD
Sunday - TBD

    Looks like there’s going to be lots of yummy meals eaten this week.
