Menu Plan Monday


We are all done with baseball season - after two Championship games this weekend (we won BOTH!) and this is our last week of school. . .next week starts our camp schedule (later mornings and earlier afternoons).  Here's what's on the plan for this week:

Monday - Baked Pasta and salad
Tuesday - Stuffed Flounder, Green Beans & salad
Wednesday - BBQ Chicken, Potato Salad
Thursday - leftovers
Friday - Take Out/Pizza Night
Saturday & Sunday - TBD

John and I recently talked about making some dietary changes. . .trying to incorporate more meatless meals into our weekly plans.  Do you practice Meatless Monday or are you a vegetarian? What are some of your favorite recipes and sources for yummy family-friendly dishes?  I'm hoping to incorporate some in the weeks to come.

  1. We have a garden, and one of my fave things to do is pick a bunch of veggies (tomatoes, bell peppers, basil, etc) and saute' them, then toss with hot pasta, and sprinkle with cheese. Light, easy, and yummy!
    We also do breakfast for dinner, and make omelets with veggies in them, trying to up our vegetable/fruit intake as much as we can.

  2. I am moving slowly away from meat. It is hard not because I crave it but b/c I know how to cook it in so many ways. The CSA I do has helped me learn to make more meatless or meat as a condiment (think chopped bacon with tons of veg and beans) meals. I am really liking the flavor of beans cooked with olive oil and tomatoes with greens. It is really filling and comforting too. Serious Eats has a TON of amazing recipes. It is my new goto site for recipes.
