How-To: Make the Everyday a Little More Special

When I was a little girl, my grandmother always had a tub of COOL WHIP Whipped Topping in her refrigerator or freezer (sometimes both!).  We put it on top of berries that were fresh from her own garden, or used it to top a piece of pie.  She used to make this Pineapple Cream Cake:

Mix together and bake in a prepared jellyroll pan:
1 pkg yellow cake mix
1 pkg instant vanilla pudding
1/2 c oil
4 eggs
1 c water

Mix together and spread on cooled cake:
2 pkgs instant pudding
1 8 oz pkg cream cheese
2 c milk

Drain 1 can crushed pineapple and spread on pudding mixture.

Top with COOL WHIP.

Now that I have my own kids, we like to use COOL WHIP to make our own desserts just a little more special too.  COOL WHIP makes it easy to take something you have on hand and "kick it up" a notch.



For Flag Day this week, we mixed up some red and some blue Jell-O.  After it was ready, we layered red Jell-O, COOL WHIP and then blue Jell-O on top for a patriotic, red, white and blue dessert.  You can easily add a layer of graham crackers on the bottom, and a strawberry and blueberry on top to make it fancy.


It was so easy, and the kids loved it.

Since it's strawberry season, another night this week, I cut up some of strawberries and served them on top of pre-made little cakes, and topped it all with a big dollop of COOL WHIP.  A definite crowd-pleaser and again, something simple, made a little more special.


Looking for a few more ideas to make your everyday a little more special?

Try a Cool WHIP Log:

Bake one pkg of angel food cake mix according to directions in a sheet pan (jellyroll pan).  When cool, spread with COOL WHIP and add fruit of your choice (strawberries, blueberries, peaches, etc)  If using canned or frozen fruit, make sure it drains first.  Roll up jellyroll style and freeze.  Ice with more COOL WHIP and decorate with fruit before serving. (This can be frozen before icing) It's perfect to take to an event.

Or if you're a chocolate lover:

Make a chocolate sheet cake, top with chocolate pudding mixed with cream cheese, add a layer of cherry pie filling and top with COOL WHIP.  Add chocolate shavings to fancy it up even more. (Thanks mom for the easy and delicious idea!)
